You Will Need:

FOR CHOCOLATE CHIP COOKIE RECIPE:

1 & 1/4 Cups Gluten-Free Flour (one that includes Xantham Gum, like our faves: Jules Gluten-Free All-Purpose Flour or Silvana's Flour Recipe)
1/2 tsp. Salt
1/2 tsp. Baking Soda
1 tsp. Gluten-Free Baking Powder
1/2 Cup Shortening (Crisco sticks make it uber-easy)
1/2 Cup Brown Sugar
1/4 Cup Granulated Sugar
1 Egg
1 tsp. Gluten-Free Vanilla Extract (LOVE Costco's!)
1 Cup GFCF Chocolate Chips (Ghiradelli Semi-Sweet)

TO STUFF:

1 Package KinniToos (gluten-free, dairy-free chocolate sandwich cookies)

Step-by-Step Directions:

In small bowl, combine Flour, Salt, Baking Soda & Baking Powder
In KitchenAid Mixer (or by hand) Cream Shortening, Brown Sugar & Granulated Sugar
Add Egg & Vanilla
Slowly add in Flour Mix
Mix in Chocolate Chips
For dough easier to work with, refrigerate for a bit
Preheat oven to 375 degrees & line baking sheets with parchment paper
Scoop out one small bowl of dough & place on top of one KinniToo. Repeat & place on bottom of KinniToo. Smush down & pinch sides so entire KinniToo is covered with cookie dough.
Place on parchment-lined baking sheet
Bake for 10-12 Minutes
Remove from oven & transfer to wire rack to cool

Tips & Tricks:

Do a Test Bake! Bake one cookie to see if it holds it shape (unlike our "ooops" pancake-like cookie to left). If it doesn't hold shape, add a bit more flour. Plus, the ooops cookie gives you an excuse to sample the goods without guilt, all in the name of quality control :-)
