Gluten-Free Cookies & Cream Rice Krispie Bars

Ingredients for Cookies & Cream Rice Krispie Treats:

6 to 8 Cups Gluten-Free Rice Krispies, depending on your desired level of gooeyness
1/4 Cup Butter
1 Bag Mini-Marshmallows
1 1/2 Bags KinniToos Sandwich Cookies (gluten-free Oreos)
1/2 Tablespoon Gluten-Free Vanilla, such as Kirkland Brand
1 Bag White Chocolate Chips, such as Ghiradelli or Guitard

Step-by-Step for Gluten-Free Cookies & Cream Rice Krispie Treats:

Grease 9x13 pan, glass or metal (not nonstick) preferred so bars can be cut in pan.
Chop 1 bag of Gluten-Free Oreos/KinniToos into large pieces - quartered works great (these will be IN the bars). Smash remaining 1/2 bag of Gluten-Free Oreos/KinniToos into small crumbles (this will be the topping)
Melt butter over medium-high heat in a saucepan, non-stick preferred.
Stir in marshmallows and gluten-free vanilla. Stir with a non-stick or silicone spoon until melted.
Pour in Gluten-Free Rice Krispies and stir until all rice krispies are covered in marshmallow mixture. Quickly add in chopped gluten-free Oreos/KinniToos and stir gently until well distributed.
Drop gluten-free vanilla oreo rice krispie treat mixture lightly into pan, gently evening out any mountains.
Melt white chocolate chips in microwave in 30 second increments, stirring between each segment. Pour melted white chocolate over rice krispie bars and quickly sprinkle smashed gluten-free Oreo/KinniToos evenly across the top.
