Gluten-Free Mashed Potato Pancakes are a great twist on the beloved gluten-free pancake. Use leftover gluten-free mashed potatoes from Thanksgiving or Christmas to make these delicious treats for breakfast or dinner! Printable Recipe on bottom left.
Ingredients: · Leftover Gluten-Free Mashed Potatoes · 1 Egg · 2 – 4 Tablespoons Gluten-Free Flour Optional Mix-Ins: · Garlic Powder · Salt & Pepper · Chopped Onions, Chives or Scallions · Crumbled Gluten-Free Bacon · Shredded Cheese · & anything else you can dream of!
