Rice Krispie Scotcheroos are a beloved treat on our annual ski trip. These delicious gooey, chocolately rice krispie bars are hard to resist and have been known to be slightly addictive. The Scotcheroos really seem to disappear late night, when the boys have a few beers and tell stories from their glorious college days.
Unfortunately, or fortunately for my waistline, I had not been able to partake in the chocolate, peanut butter, butterscotch deliciousness that is a Scotcheroo because Rice Krispies contain gluten. Luckily Gluten-Free Rice Krispies just launched, and the first thing I did was get the legendary Scotcheroo recipe, to make it gluten-free.
This Gluten-Free Scotcheroo recipe is 25+ years old and is the BEST, because it increases the ratio of gooey-ness to gluten-free Rice Krispie, making every bite indulgently chewy. These are the perfect homemade no-bake treat to bring to your next BBQ or family gathering and nobody will believe they are gluten-free! Enjoy glutenistas!
VERY IMPORTANT: Please note that some Butterscotch Chips, such as Nestle, contain Barley which is not gluten-free. Read the label on the butterscotch chips very, very, very carefully for hidden barley or malt!
Ingredients for Gluten-Free Scotcheroos Recipe:
These gluten-free Scotcheroos can easily be made nut-free by using Sunbutter or another peanut butter substitute and dairy-free by using dairy-free butterscotch or peanut butter chips - we have heard that some generic baking chips have these flavors dairy-free & gluten-free.
