glutenista’s Fabulous Gluten-Free Spritz Cookies
Spritz cookies have always been a favorite of this Glutenista. Every holiday season my mom, sister & I would set aside an afternoon to make Spritz & Buckeyes. Naturally, my favorite part was the frosting (Tiny secret: I have always had an abnormal fondness for powdered sugar). Eventually we got into a rhythm - my sister & I would pump out the spritz cookies into our favorite designs (she loved hearts, I loved trees), my mom would frost & I'd go crazy sprinkling. Of course I'd sneak a few here & there... and of course you had to eat the "ooops" spritz cookies. After years of terrible Gluten-Free Spritz Cookie experiments, my sister & I were determined to make a fabulous, easy spritz cookie that tasted just like mom used to make. We found it! Just a few simple tweaks to help it stay together. Enjoy! shhhh, here is the family recipe: Gluten-free updates:
· Use ½ cup Butter, ½ cup Shortening · Add 1 tsp. Baking Powder · Add 1 tsp Xanthan Gum · Use Gluten-Free All-Purpose Flour NOTE: a GREAT GF flour is necessary here. One ideally w/Xanthan gum already in the base. I used Silvana Nardone’s flour recipe. If you don’t want to create your own, Jules All Purpose Flour was recommended to us by the local all Gluten-Free store. GLUTENISTA FAMILY FROSTING RECIPE: · 2 cups Powdered Sugar · 2 T. Milk · 2 T. Softened Butter · 1 tsp. Almond Extract Mix & add milk to thin as necessary! Divide & add food coloring. Frost & Decorate immediately. |
