glutenista® asks:
You have spent many years involved with food, as Editor-in-Chief of Every Day with Rachael Ray magazine and owning a bakery. How do you find daily inspiration? I find inspiration all around me, even just walking down the street. It could be a smell in the air that takes me back to a moment in time—a person, a place, a meal that I had years ago. It could be something Isaiah or Chiara says to me that plants a thought in my head and ultimately morphs into an idea. Then, of course, there are the seasonal ingredients sitting right in front of me that keep my mind bending in all sorts of ways! As Isaiah gets older, have you noticed a change in the food he wants to eat? What gfcf snacks do you have on hand or make for him? Absolutely! Since he was diagnosed as gluten intolerant, his food choices have actually expanded. Funny how things like that happen! He loves his snack foods, so I always have plenty of stuff in the fridge or in his cabinet. (Actually, each family member has his or her own kitchen cabinet full of favorite snacks and treats!) Some of his go-to snacks include grapes, carrots, cherry tomatoes, pistachios, tortilla chips, fruit twists and, of course, my homemade chewy chocolate chunk cookies from the cookbook. Thanksgiving is fast approaching, what will be on your menu? Pumpkin pie, pecan pie, kale caesar slaw, simple roast turkey (no brining necessary!), swiss chard-pine nut tart, cornbread stuffing, in no specific order! I must be forgetting something… What is Isaiah’s favorite recipe in Cooking for Isaiah? Banana Doughnuts with Banana Frosting Yours? Scampi-Stuffed Roasted Shrimp What is your all-time favorite food (gluten-free or not)? I’m a sucker for a good cookie. Favorite Gluten-Free Food or Ingredient? My favorite gluten-free ingredient is hands-down rice cereal. It’s versatile and has a long shelf life. What more could you ask for? Favorite Kitchen Gadget or tip/trick? My favorite kitchen gadget is my waffle iron, where I like to make sandwich bread and hash brown waffles. The holidays are quickly approaching - what gifts are you excited to give this year? What would you like Santa to bring for you? Isaiah has already placed his order: new iPod and a ping-pong table…we’ll see about that! Still waiting for Chiara’s… We noticed the family playing Wii – what are the favorite Wii games in your household? Just Dance and Tiger Woods PGA Tour 11 are on heavy rotation in our house. Bonus Question: You are a journalist – what question do you love to ask others or love to be asked? Please answer your own question I always wonder how people get where they are in life and what their journey was like. Growing up all over the world and having owned an Italian bakery, I could never have predicted in a million years that I’d be a gluten-free cookbook author. Isaiah brought me on this path and I’m loving every step along the way! Many thanks to Silvana for sharing her story & her delicious recipes! Visit www.dishtoweldiaries.com for more from Silvana The best part? It doesn’t feel or taste gluten & dairy-free! Thanks to Silvana’s cookbook, I have enjoyed delicious GF foods I had dreamed of for years: Ice Cream Cones, Pizza Crust, crunchy Chicken Fingers & the amazing Chocolate Chunk Cookies. I’ve also added favorite go-to recipes: Black Bean, Corn & Yellow Rice Enchiladas, Chicken Potpie Soup & a Jalapeno Mayonnaise that is great on pretty much everything. Her classics with a twist keep me going back to Cooking for Isaiah again & again” -glutenista |
