I'm going to let you in on a few little secrets...
Before going gluten-free? Brownies were made via Betty Crocker mix, chocolate chip cookies from the Nestle bag recipe & the first time I cooked a full meal (for my dad when my mom was out of town), I started the recipe on fire. No not the food, the actual recipe... yikes. I have a scar on my left hand from burning myself taking a pizza out of the oven the summer after freshman year of college while my parents were out of town for 6 weeks. I ate ice cream for lunch & dinner rest of the time they were gone (seriously). Before starting Glutenista: I owned one box of sugar for 4 years, never had butter in my fridge and survived on one box of gluten-free all purpose flour for about 2 years. Single in the city, sometimes my dinner would be happy hour drinks & a few rice cakes, or a Trader Joe's microwavable brown rice bowl gussied up with San J tamari sauce. My average corporate work week was 60-70 hours, with the rest of my time filled with travel, volunteer activities and a fun social life. Like heck I was going to spend 5 hours in the kitchen, mixing gluten-free flours, only to have the end result be awful. So what changed? 1. Meeting my (now) husband: he was always so excited to eat the creations that I prepared for him. His enthusiasm & compliments made me keep reaching for the gluten-free cooking stars.

I get SOOOO sick of websites & blogs telling you their recipes will only work with their special flour blend. Don't have a scale? Can't eat nuts? You're out of luck. So we're telling you about the flour that will work with any recipe. Everything we made was with a gluten-full recipe, from places like AllRecipes.com & an old Good Housekeeping cookbook, substituting Jules' Flour one-for-one. Every recipe worked, it was A-MAZING! So while others may be encouraging you to pick up a scale & use a million different gluten-free flours, I encourage you to pick up only one flour. Because really it's all you need. Think about it, when you were gluten-full, how many different flours did you use? |
