Or in our dream last night? Either way, this EASY frosty gluten-free pineapple coconut treat has a way of transporting your mind to a better place by combining Pineapple with gluten-free Coconut Rum.

Pineapple Coconut Sherbet is an easy way to use up leftover pineapple after making our favorite easy 5-minute Pineapple Upside Down cake, our inspiration for this Glutenista original recipe
The gluten-free coconut rum in this recipe prevents the sherbet from hardening, so if you skip the booze, add a little coconut cream & plan to eat it right away. Twist your arm, right?

Ingredients for Pineapple Coconut Sherbet Recipe:

1 Can Dole Pineapple Rings in 100% Fruit Juice
3 to 6 Tablespoons Super Fine Sugar, depending on sweetness preference
2 1/2 Tablespoons Coconut Rum, such as Cruzan
1/2 Cup Milk

Step-by-Step Directions for Pineapple Coconut Sugar :

Remove pineapple rings from can, and set aside juice. In a blender (or magic bullet), blend pineapple rings with about 1/3 of juice from the can, more if needed to blend well. Add sugar and pulse to combine. Add coconut rum and pulse. Lastly, add the milk and mix. Taste & add more sugar if preferred.
Glutenista tip: love coconut? add a bit of Coconut Cream to the mix as well
Glutenista tip: hate pulp? strain the mixture before freezing
Prepare Pineapple Coconut Sherbet according to your ice cream maker's directions (we prepared it using a KitchenAid Mixer Ice Cream Attachment) and freeze for 3-4 hours before serving. OR blend as much as possible and throw the mix in a freezer safe container for 4-6 hours.
Serve with gluten-free pineapple upside down cake or as a refreshing dessert by itself.
