"Patriot Cookies" aka Gluten-Free Chocolate Oreo Cream Cheese Cookies Recipe
Sometimes it's hard to keep it all in perspective, especially when you're facing an "illness" or "disability" or "disease" or "food allergy" or "intolerance" that most likely will affect you every day for the rest of your life. Before you were gluten-free, did you realize how integral food was to socializing, to surviving, to living every day? No, me neither.
But sometimes life has a way of helping you put it all in perspective, In my dear sister's case, her husband being deployed to Iraq. Suddenly, having a restricted diet doesn't seem so bad.
Plus, how awesome & supportive is the gluten-free community?
When we asked for ideas on durable cookies that would hold-up being shipped to Iraq on Twitter, we were so pleasantly surprised to hear from Caitlin, who shared the recipe for Cream Cheese Cookies her mother-in-law would send to her husband when he was deployed in Iraq. Caitlin was very enthusiastic about how good the cookies were.
While the recipe wasn't gluten-free, it contained just a few ingredients that seemed easy enough to convert:
My brother-in-law is in-flight to Iraq as I type. That news sent me into to the kitchen on a crazy baking spree, as the countdown to his return finally begins. As does the jumpiness of hearing any bad news out of Iraq. As does the worrying about my sister. And my 4 & 5 year old nephews. But I know all will be okay. At least we all have our health, our faith, and each other.
And the troops in Iraq? They're going to have these delicious Gluten-Free Oreo Cream Cheese Cookies. We figured pink cookies wouldn't go over so well on base, so we amped it up a bit, adding Chocolate & {faux} gluten-free Oreos. See a step-by-step by clicking on the first photo below: |
We've named these Chocolate Oreo Cream Cheese Cookies "Patriot Cookies" in honor of Caitlin's husband, my brother-in-law & his unit of pilots, and all the troops who are serving around the globe. Even more than that, they are dedicated to those tending to the fort back home: the mothers, the wives, the children of the soldiers who are so bravely holding it together while their loved ones are gone. Do something nice for someone today. Say Thank You. Bake someone cookies. Do a favor & don't expect anything in return. Call that grandma or neighbor or friend who may be alone, just to chat. Leave flowers on someone's doorstep. Trust us, you get back more than you give from random acts of kindness. |
Gluten-Free Chocolate Oreo Cream Cheese Cookies Recipe
You Will Need:·
1/4 cup butter
· 8 oz cream cheese (get the good stuff - the original Philly) · 1 large egg · 1 teaspoon vanilla · 1 pkg chocolate cake mix · ½ cup applesauce · 6 kinnitoos (GF Oreos), Crushed Step-by-Step Directions: |

- cream butter and cream cheese
- blend in egg and vanilla
- add cake mix - 1/3 at a time, mixing well after each addition, followed by applesauce
- cover, chill at least 30 minutes (usually 2 hours to overnight)
- form small ball, roll in kinnitoos & drop onto parchment lined cookie sheet
- bake at 375 for 8-10 minutes (look
at them after 8 - they brown fast depending on how hot the oven really is)
- If Desired: drizzle with White Chocolate. Put frosting in the middle & make a cookie sandwich. Dunk in frosting. Enjoy!
